  16. Make ready 1/4 C water (or use coconut milk/ milk/ thickened cream/ heavy cream)

  18. Prepare To taste - chicken seasoning powder or salt

Instructions to make Tofu in Indian Spinach Curry:
  1. A - Cut tofu into preferred size and deep fry until lightly browned (Or deep fry first then dice into bite size). Keep aside.
  2. B - Over high heat, boil enough water for blanching. Add 1 tbsp of cooking oil. Bring to a good boil. Blanch baby spinach, then drain the water, reserving few tbsp of liquid for blending. Blend into a very fine creamy puree. Put aside. Prepare the rest of the ingredients.
  3. B - Heat 3 tbsp of oil in a pan. Sauté brown onion and garlic until aromatic. Add diced tomato. Stir to combine. Add the rest of the POWDERED SPICES. Mix well. Add A (cubed tofu) and B (blended baby spinach). Add LIQUID and SEASON to taste. Simmer for a minute and remove from the heat. Add a splash of cream (optional).
  4. Dish up. Serve with warm rice.
  5. Ready to serve and ENJOY!
