  14. Take 1 tablespoon Sesame Oil
  15. Make ready 1 tablespoon Potato Starch

Tobanjan is fermented chilli bean paste made from broad and soybeans. Mapo Tofu (mabo dofu in Japanese) is originally Chinese but it’s also a common dish that nearly every family in Japan have regularly. Also the fact that Japanese-style mabo dofu is a bit different from authentic Chinese Mapo Tofu makes it even more interesting. Drain the tofu, then place the tofu on a paper towel and wrap it loosely with the paper towel.

Steps to make Mabo Dofu (Tofu) Japanese Style:
  1. Prepare vegetables. Basically you need to finely chop up everything. Save green part of Spring Onion for the topping when you serve. Cut Tofu into bite-size cubes.
  2. Place all the sauce ingredients in a mixing bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.
  3. Heat Oil in a large frying pan or a wok, cook Pork Mince and vegetables breaking up the mince.
  4. Before you add the sauce mixture into the pan, mix it well again. Then pour in the sauce mixture and bring it to boil and let it thicken.
  5. Add Tofu and gently mix and combine.
  6. Sprinkle the chopped green part of Spring Onion on top and serve.
  7. Ready to serve and ENJOY!

Also the fact that Japanese-style mabo dofu is a bit different from authentic Chinese Mapo Tofu makes it even more interesting. Drain the tofu, then place the tofu on a paper towel and wrap it loosely with the paper towel. Add the katakuriko mixture and stir through to thicken the dish. Garnish with the chopped coriander and season with sansho to taste. Mapo tofu is a popular Sichuan dish — tofu in a spicy sauce, featuring pork or beef as more of a seasoning than the main event.
