  15. Make ready 1 veg stock cube in 200ml water
  16. Get 3 TS fish sauce

  1. Prepare your ingredients and wash veggies well, and cut tofu in half and then in cubes
  2. In a big pot, add 2 TS coconut oil, onion (thinly sliced), garlic, galangal and ginger powder, red thai curry paste and cook for 5 min
  3. Now add the lemongrass for the flavor (you will have to remove it before serving)
  4. Add veggie stock, throw in all your cut veggies apart from mushrooms and cook uncovered for about 30 min
  5. After 30 min, remove lemongrass add coconut milk, tofu and mushrooms
  6. Cook for 15 min, and then add lemon juice and fish sauce. Serve with a ladle add some fennel leaves and enjoy 😉
