- Heat peanut oil in a wok over high heat. Add minced meat and stir well until thoroughly cooked, approx 1-2 mins.
- Add capsicums and stir-fry for approx 3 mins. Capsicums should be cooked but still crunchy.
- Add tofu mixture and stir through gently for approx 2 mins.
- Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.
- Serve with brown rice.
