  11. Prepare 1 pepper to taste

  13. Prepare 2 cup tomato sauce
  14. Prepare 2 tbsp brown sugar
Steps to make Vegetarian Stuffed Peppers:
  1. preheat oven to 350°F (175 degrees C)
  2. in a saucepan bring 3 cups of water to a boil
  3. stir in rice
  4. reduce heat, cover and simmer for 40 minutes
  5. meanwhile, core and seed green peppers, leaving bottoms intact
  6. place pepper in a microwavable dish with about 1/2 inch of water at the bottom
  7. microwave on high for 6 minutes
  8. in a small frying pan bring the soy sauce, wine, and Worcestershire sauce to a simmer
  9. add tofu and simmer until the liquid is absorbed
  10. combine rice (after of has cooled), tofu, cranberries, nuts, cheese and pepper; pack firmly into peppers
  11. return the peppers to the dish you first microwaved them in
  12. bake in preheated oven for 25-30 minutes, or until lightly browned on top
  13. meanwhile, in a small saucepan over low heat, combine tomato sauce and brown sugar; heat until it is hot throughout
  14. spoon the sauce over each serving & enjoy!!
  15. Ready to serve and ENJOY!
