  1. Prepare 2 Tbsp oil
  2. Make ready 1 large potatoes diced
  3. Take 1 tsp vegetable broth powder
  4. Prepare 2 Tbsp lemongrass

  6. Make ready 1 c. soy milk
  7. Take 1 c. tofu, veggy meat diced
  8. Prepare 2 c. carrots cur in 1* pieces
  9. Take 2 Tbsp curry
  10. Take 2 Tbsp coconut powder
Instructions to make Vegan Curry (Cari):
  1. Fry potato in oil, veggy broth powder, and lemongrass to lightly browned.
  2. Add 1 Tbsp curry, and carrots to pan, stir and fry for couple of minutes, add water to 1 inch above the potatoes and carrots on medium heat.
  3. Add diced tofu or veggy meat, soy milk, bay leaf, 1 Tbsp curry, put lid on pan, let simmer 10 min.
  4. Add coconut powder and mix well.
  5. Eat with rice.
  6. Ready to serve and ENJOY!
