  1. Cut the tofu into two-inch cubes. Roll it into the cornflour.. In a wok heat the veg oil and fry the tofu till golden and crispy. Transfer into a plate and keep warm..

  3. Discard the oil but one tbsp and fry the ginger until fragrant. Turn the heat down and add the oyster sauce, soy sauce, sugar, cornstarch and water. Stir until thick, clear and shiny.. Add the fried tofu to the sauce. Gently stir it to let the tofu heated through
  4. Taste and adjust the seasoning. Transfer into a serving dish, sprinkle with crispy garlic and garnished with chopped spring onions. Serve straight away.
