  2. Take coriander seeds

Steps to make Thai Veg. Green Curry:
  1. First heat a pan add coriander, cumin seeds, peppercorns and lightly dry roast then cool down.
  2. Now in a mixie, crush coriander, cumin seeds and peppercorns then add garlic, ginger, onion,green chilli and bunch of coriander leaves with stem, lemongrass stem, lemon juice, lemon zest and little water, grind to make a smooth paste, keep aside.
  3. Heat oil in a kadai, lightly shallow fry the tofu and keep aside.
  4. Heat oil in a kadai add all vegetables with little salt and saute lightly in high flame and take it out - this will keep vegetables crunch and also good for colour, keep aside.
  5. Heat oil in a kadai add green paste, cook at medium flame. It will get a dark in colour then mix all vegetables back in the kadai and saute 2-3 minutes.
  6. Now add coconut milk, tofu, brown sugar and little water and cook for few minutes when we add coconut milk heat should be very low. Once see bubbles turn off the flame, do not over cooked.
  7. Veg Thai Green Curry is ready.
  8. Serve with butter rice. Enjoy Thai style Meal.
  9. Ready to serve and ENJOY!
