  1. Make ready tofu, extra firm, pressed dry
  2. Prepare coconut milk
  3. Take red curry paste
  4. Get green bell pepper
  5. Prepare vegetable oil
  6. Take peanut butter (smooth)
  7. Take fish sauce (or 1 tbsp)
  8. Take sugar
  9. Make ready fresh basil (shredded)
  10. Make ready kafir lime leaves (shredded)

  1. Stir-fry tofu in chunks (about 10 minutes) until browned. Add thinly sliced pepper for last few minutes.
  2. Boil 1/2 of coconut milk and dissolve in 2 oz of curry paste (add more to taste). Dissolve in peanut butter, sugar and fish sauce. Add the rest of coconut milk.
  3. Add tofu and peppers to sauce and simmer until slightly thickened
  4. Add basil and lime leaves.
  5. Ready to serve and ENJOY!
