- Open can(s) of coconut milk with a can opener/knife
- Pour coconut milk into the pot. Mix milk with curry paste and garlic.
- Wash your potatoes, carrots, and onion.
- Cut the potatoes, carrots, and onion to the desired size.
- Add the potatoes, carrots, and onion to the pot, and stir to incorporate. Cover your pot.
- Remove the tofu from its packaging and remove any excess water.
- Cut the tofu to the desired size
- As the potatoes/carrots approach the desired softness, add tofu.
- Add peanuts and/or cashews to the pot, and stir to incorporate.
- Rinse your avocado
- Quarter and dice your avocado
- Turn heat off when tofu is cooked, but before it becomes mushy
- Scoop curry into a bowl (do what you want)
- Add avocado on top
- Consume
- Ready to serve and ENJOY!
