Marinate while you cook the tofu. After the tofu has been prepared, toss the spinach with the marinated tomatoes and top with hot or cold Sriracha and Soy Sauce Tofu, chopped avocado, and a sprinkle of. For this salad I substituted marinated tofu slices for the mozzarella. Alternate placing tomato and tofu slices on a large plate.

Steps to make Tofu and Tomato salad:
  1. Coat the tofu with salt.
  2. Wrap the tofu with paper towel, press it under weight to drain. I use a stoneware bowl. Sit in fridge half day/overnight.
  3. Slice the tofu and a tomato in bite size pieces. Arrange them on a platter in an alternating pattern.
  4. Scatter chopped coriander leaves over the tofu and tomato. Sprinkle with several grinds of pepper, drizzle sesame oil over them. Serve immediately.
  5. Ready to serve and ENJOY!

For this salad I substituted marinated tofu slices for the mozzarella. Alternate placing tomato and tofu slices on a large plate. Add a dallop of pesto on each slice of tofu. Drizzle with reduction sauce and remaining basil leaves. Tofu and arugula salad will be seasoned with peanut sauce.
