This Vegan Tokwa’t Baboy is a pork-free take on one of my favourite Filipino dishes.

The ingredients needed to make Tokwat Baboy (Tofu and Pork):
  1. Get 1 pack extra firm tofu, pat dry and cut into bite size
  2. Prepare 1 lb pork cut into bite size
  3. Prepare 1 thumb size ginger, minced fine
  4. Make ready 1/3 cup vinegar
  5. Get 1/2 tsp sugar
  6. Take 4 tbsp soy sauce
  7. Take 1 piece medium size onion chopped
  8. Make ready 1 large jalapeno or red chili pepper, sliced thin
  9. Make ready 2 tbsp chopped red bell pepper
  10. Take salt and ground pepper to taste
  11. Make ready cooking oil

Wash and clean the pork ears and cheeks by removing hairs and remaining blood. Tokwa’t Baboy is a popular side dish / appetizer in the Philippines where the main ingredient are tofu and pork’s ears (Yes you read it right pork ears). Tofu as most of us know is made out of coagulated soy milk then pressed, a very popular ingredient in Chinese cuisines as well as other Southeast Asian. There are two ways of serving this.

Instructions to make Tokwat Baboy (Tofu and Pork):
  1. In a bowl, combine soy sauce, vinegar, sugar, ginger, onion, bell pepper, salt and ground pepper to taste. Stir well and taste to see if salt or more sugar is needed. Set aside.
  2. Cut tofu into bite size and deep fry in oil until golden brown and crispy.
  3. Cut pork into bite size and deep fry in oil until golden brown
  4. In a large bowl, combine fried tofu and pork. Pour in vinegar-soy sauce mixture and toss until well combined.
  5. Top with jalapeno pepper and stir. Best serve with arroz caldo (see my recipe) and/or serve as appetizer. Enjoy!
  6. Ready to serve and ENJOY!

Tofu as most of us know is made out of coagulated soy milk then pressed, a very popular ingredient in Chinese cuisines as well as other Southeast Asian. There are two ways of serving this.
