Soak the hijiku in lukewarm water to rehydrate. Silken tofu is an excellent substitute for eggs in this incredible vegan omelet.

  1. Gently sice the tofu then arrange in a plate
  2. Crack egg and add just a little salt.Then beat ut and pour over the tofu.
  3. Then sprinkle chilli and spring onion on top
  4. Heat pan and add oil then.slowly pour the mixture.
  5. Slowly fry it and cover
  6. Ready to serve and ENJOY!
